Shrimp Skewers with Mango-Orange Sauce

(4 Portions)


  • 500 grams large shrimp, peeled
  • 1 piece of ginger (1×1 cm), finely grated
  • 2 cloves garlic, finely grated
  • 1 teaspoons coriander seeds, ground
  • 2 tablespoons olive oil
  • 3 tablespoons SOFRUCO orange juice
  • Olive oil

For the sauce:

  • 1 ½ cup mango, chopped
  • ½ cup SOFRUCO orange juice
  • ½ onion, finely chopped
  • 1 clove garlic
  • ¼ cup vinegar
  • Salt and pepper


  • In a bowl, place the shrimp, ginger, garlic, coriander seeds, olive oil, and orange juice. Mix well and set aside to marinate for 15 minutes.
  • In a pot, heat a little olive oil and sauté the onion and garlic until golden. Add the mango, orange juice, and vinegar. Cook over medium heat for 15 minutes. Transfer the mixture to a blender and process until smooth. Force through a fine strainer, adjust the salt and pepper, and set aside.
  • Thread the shrimp onto skewers and grill over high heat for 3 minutes per side.
  • Serve the shrimp skewers with the mango sauce.
