Roast Beef Salad with Mixed Greens and Strawberry Dressing
400 grams beef striploin
1 bunch aromatic herbs, finely chopped
1 teaspoon butter
4 large bunches mixed greens
3 tablespoons of cashew nuts, chopped
For the dressing:
2 tablespoons balsamic vinegar
1 cup SOFRUCO strawberries, finely diced
2 tablespoons chives, minced
2 shallots, finely chopped
3 tablespoons olive oil
Juice of 2 SOFRUCO lemons
Salt and pepper to taste
In a skillet, heat the olive oil and sear the steak on both sides until nicely browned. Place the steaks on a baking sheet with the herbs and butter. Season with salt and pepper, cover with aluminum foil and bake at 180ºC for 5 minutes. Remove from oven and let the meat cool.
Slice the meat thinly and set aside.
In a bowl, mix together all the dressing ingredients and season with salt and pepper.
To serve, arrange the greens on a plate, top with slices of steak, drizzle with a few tablespoons of strawberry dressing, and sprinkle with the cashew nuts.
