Roast Beef Salad with Mixed Greens and Strawberry Dressing
(4 Portions)
Ingredients:
- 400 grams beef striploin
- 1 bunch aromatic herbs, finely chopped
- 1 teaspoon butter
- 4 large bunches mixed greens
- 3 tablespoons of cashew nuts, chopped
For the dressing:
- 2 tablespoons balsamic vinegar
- 1 cup SOFRUCO strawberries, finely diced
- 2 tablespoons chives, minced
- 2 shallots, finely chopped
- 3 tablespoons olive oil
- Juice of 2 SOFRUCO lemons
- Salt and pepper to taste
Preparation:
- In a skillet, heat the olive oil and sear the steak on both sides until nicely browned. Place the steaks on a baking sheet with the herbs and butter. Season with salt and pepper, cover with aluminum foil and bake at 180ºC for 5 minutes. Remove from oven and let the meat cool.
- Slice the meat thinly and set aside.
- In a bowl, mix together all the dressing ingredients and season with salt and pepper.
- To serve, arrange the greens on a plate, top with slices of steak, drizzle with a few tablespoons of strawberry dressing, and sprinkle with the cashew nuts.
