Grilled Lemon-Turmeric Chicken Skewers

(5 Portions)

Ingredients:

  • 800 grams chicken thighs
  • 2 SOFRUCO lemons, sliced
  • Oil for the grill

For the marinade:

  • 1 teaspoon turmeric
  • 1 tablespoon Dijon mustard
  • 2 cloves garlic, finely grated
  • ½ cm piece of fresh ginger, finely grated
  • 1 teaspoon cumin
  • Add  SOFRUCO lemon juice to your taste and zest

For the sauce:

  • ¾ cup yogurt
  • 1 bunch fresh mint, finely chopped
  • 3 tablespoon SOFRUCO lemon juice
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Preparation:

  • Wash the chicken thighs, remove the skins and bones, and cut them into 2-cm cubes.
  • In a large bowl, whisk together all of the marinade ingredients. Add the chicken, mix well, and marinate at least 30 minutes.
  • In a bowl, mix the ingredients for the yogurt sauce together and set aside.
  • Thread the chicken cubes onto the skewers and end with a lemon slice.
  • Heat the grill and brush with a bit of oil. Grill the skewers for 7 minutes on each side or until crisp and golden.
  • Serve the skewers with the yogurt sauce.
